Chicken Parmesean Sandwich




The other night I was on my own for dinner. Everything I could think of cooking seemed to require too much effort. Then I discovered a leftover chicken boob in the fridge....

My brain went into overdrive and pretty soon I had the most delicious chicken parm sandwich on my plate. Sometimes the simplest dinners can be the most rewarding!

1 cooked chicken boob
2 slices of your favorite bread
1/2 cup tomato sauce
1-2 slices of cheese
a few olives for garnish.

Toast the bread. Warm the boob in a skillet. Top with the sauce and cheese. Cover and heat until the cheese melts. Slap the boob, sauce, and cheese between the bread. Lift to lips.

  1. I like chicken parmesan but what I really love is eggplant parmesan sub. Try it sometime.It's enough to ,almost (but not quite,) swear off meat!
